Bring it on!

It's the most wonderful time of the year!! There are ref's that are yelling and kitchens are smelling and every one's telling you be a good cheeeeeeeeeeeeeeeeeeeer..... it's the most wonderful time OF THE YEARRRRRR!!!

Football season, baby. Bring on the yummy hand foods. This one is a sweet dish, because that is what I crave lately. Sweets. My thighs are so happy. So happy that they are beginning to share the wealth with my calves. I would be concerned if I could see either of them.

Best Ever Apple Dip
recipe courtesy of a friend


8 ounces cream cheese (whipped is easiest to work with)
1 cup light brown sugar
1 teaspoon vanilla
1 bag heath bits

Cream the first 3 ingredients with a hand mixer on low speed until combined. Pour in the bag of heath brickle and mix on low speed until combined. Refrigerate.

This dip is awesome. I'm not just saying that because I'm pregnant. I had it before I was pregnant and loved it then too. I also think adding some mini chocolate chips couldn't hurt!

three quick things, ya gotta try!!

first of all, for anyone who may read my blog but not my friend jaime's - the grocery game is something that really intrigues me and i plan on signing up for soon. i despise coupons...... UGH! but love saving money, and now that im buying a lot of fresh fruits and veggies for full price i need to be saving money else where. well that and the whole economy thing. basically im a sucker for easyness. go into the grocery, get what you want, get out. making a list and clipping coupons does NOT appeal to me, but its something i need to grow up and do. i dont budget and im a horrible impulse buyer. which is so not mature! i need to act my wage, so im going to use the grocery game to help me out and i wish you would, too!! ive already been clipping coupons and checking out the sales paper, and i cant wait to pick up a sunday paper for even more coupons! yay for growing up!!

number two - and this kind of ties into the grocery game and eating healthy. e-mealz.com is a co-workers sister's business. (jaime, look at the picture and guess which one, they look exactly alike!) the grocery game helps you make a list, emealz goes one step further and creates your menu!! how awesome is that!! for just $5 bucks a month, you pick your plan (points, low fat, just for two, family size, etc...) and pick your store and print out your recipes complete with grocery list. it even puts the correct price by each item!! this is also something i plan on implementing.

lastly, and not nearly as exciting as saving money and having a meal plan made for you with the push of a button..... but still tasty.... is asian pears. oh.... my.... gosh!!!! also known as (thanks to me) "appears", they are delicious bites of heaven. so juicy with a honey like sweetness. please go get one. i have found them at wal mart and publix and am totally addicted to them.

I heart chips n salsa

So much that I'm going to have them for dessert!!!

While the above statement is somewhat true, I put a spin on the traditional chips n salsa to make it more dessert friendly. Because only a special breed of people would actually want salty chips and spicy salsa for dessert, and just because I fall into that category doesn't mean the guests coming to my house last night would.

Last night there was a mexican theme in the Webb household. Instead of making soapapilla's for dessert, I wanted something that could be prepared ahead of time.

I took 5 taco size flour tortillas and sprayed the tops of them with a non stick cooking spray, and sprinkled cinnamon sugar on the spray. From there I cut them into triangles and spread them out on a baking stone.

They almost look like grill marks, huh?

Now they go into a preheated 350* oven for 15 minutes.

For the salsa part, I chopped kiwis and strawberries, sprinkled with sugar and let them chill in the fridge. I actually did them the night before to save time, and the kiwis lost their color. So if I were you I would chop just the strawberries ahead of time and sprinkle with sugar and right before serving, add the chopped kiwi.

Either way it plated so cute! Looked just like chips n salsa!


It tasted equally as good, just in a totally different direction!

Smells Like Fall....

After buying a lot of granny smith apples, even though I knew I have a slight allergy to them (in "raw" form), and eating two and my bottom lip swelling way up.... I knew I had to find a good recipe to use the rest of them.

My favorite accompaniment to a granny smith apple is caramel. I thought back to my caramel apple pie and thought about making one of those, but wanted something easier, with ingredients found in my kitchen and a little lighter!!

My original baking experiment was with this recipe. Don't get me wrong.... GREAT recipe! But you need to make them with cupcake liners, because the heavy caramel chunks sink to the bottom and glue the muffins to the pan. Ok.... plan B.....

I modified and halved the recipe to make 24 mini muffins - sans caramel.

"Fall is So Close" Apple Muffins
adapted from the recipe above


1 cup self rising flour
1/2 cup brown sugar
1 & 1/4 teaspoon cinnamon
1/4 teaspoon salt
1 egg
1/2 cup milk
1/8 cup butter, melted
1 & 1/4 teaspoon vanilla
2 small granny smith apple, peeled and diced (i used a hand chopper)

preheat your oven to 350*

mix the first 4 ingredients and set aside. in a new bowl mix the milk and egg, add the butter and vanilla. Pour into the dry ingredient bowl and mix. Stir in apples. Pour into mini muffin tin and bake for 16 minutes or until bottoms are golden.

The batter is soupy and doesn't do a lot of rising, so fill the hollows up! The end result is very good and reminds you of being outside at Halloween and smelling fresh apples. Or it does me anyway!
